But sometimes I don’t have the time for measuring all of the spices (cinnamon, ginger, cloves) and am also out of molasses. This recipe has all of the gingerbread taste notes, as well as a bright kick from the orange zest studded icing.

Why You’ll Love These Ginger Sugar Cookies

Sugar cookies are the original decorating and cookie cutter go-to. The dough is filled with sugar and the bite is crisp and crumbly! These ginger spice studded sugar cookies are an elevated version! The ginger sugar cookies are filled with the spicy bite of gingersnaps, but with a softer texture. The dough comes together easily and is super simple to handle. Use my roll out technique that involves no floured surfaces; just parchment paper and plastic wrap, to simplify this recipe even more. With this method there is next to no clean up! This recipe is comforting, warming, and invitingly aromatic, and a perfect cookie for any season.

The frosting for these gingery cookies is filled with fresh orange zest! Ginger and orange are a classic flavor combo with spicy, bright, citrusy flavors all combined in one bite!

  • Ginger and orange flavors balance warmth and brightness, ginger is warm and slightly spicy, oranges have a citrusy brightness that works well with gingers intensity.
  • Both of these flavors are highly aromatic, gingers earthy and spicy scent pairs seamlessly with oranges fresh, tangy aroma.
  • This duo is often associated with cozy winter flavors, making it a popular choice for holiday treats like cookies, cakes, and warm drinks.

Storing Ginger and Orange Cookies:

Wait until icing on cookies is dry and store cookies in an airtight container for 4-5 days.

Can I use different types of citrus for the icing?

Yes! Limes, lemons of different varieties will all work very well in this recipe, so feel free to substitute the citrus you have on hand.

How long does the orange icing take to set?

The icing should be set and the cookies ready to eat (or store) in 30-45 minutes.

Is it necessary to chill the dough before baking?

Yes, this makes to cookie dough easier to work with and the cut outs hold their shape better when baking.

Ginger Sugar Cookies With Fresh 1 Orange Icing

Ingredients

  • 1 Cup Butter unsalted, 2 sticks
  • 2 Cups Confectioners Sugar
  • 2 Tbsp Light Corn Syrup
  • 1 Tsp Ground Ginger
  • 1/2 Tsp Salt
  • 1 Egg large, mixed with 2 tablespoons water
  • 3 1/2 Cups All Purpose Flour

Method

  1. In a medium bowl, cream sugar, butter and corn syrup until light and fluffy.
  2. Mix ground ginger and salt in beaten egg bowl.
  3. Add egg mixture to butter and slowly add flour until the batter in blended.
  4. Divide the dough into 2 balls and place in zip lock bags. Use rolling pin to flatten the dough slightly and place in refrigerator for 1 hour.
  5. Preheat oven to 350℉
  6. There is no need to grease the cookie sheets, but I recommend using parchment paper for ease of clean up.
  7. On either a lightly floured surface or between 1 piece of parchment paper and 1 piece of plastic wrap (recommended) roll dough out with rolling pin to about ⅛ thickness, the thinner the dough, the crisper the cookie will be.
  8. Cut shapes out of cookie dough, cut the shapes closely together, this dough tends to dry out and scraps can only be rerolled once.
  9. Place cookie dough shapes on parchment paper lined sheet (if using) and bake for 8- 12 minutes. Remove from oven and let cool completely before decorating.
